Is there anything else besides the I-129F, G-325A and the letter of intents that needs to be signed? Do we need to sign copys of birth certificates, or invoices or the pages with the boarding tickets too?

The I-129F, G-325A's and letters of intent are the only documents that absolutely must have an original signature. There is no need to sign copies of any other documents or evidence. If you use continuation sheets for any of the forms (i.e., you wrote "see attachment" on the form) then USCIS does request that you sign and date the continuation sheets (this is in the instructions for the I-129F). However, they probably won't reject your petition if you don't sign the continuation sheets. I used continuation sheets for the I-129F and G-325A's, and didn't sign any of them. The petition was approved without problems.
