This is one of my family's favourites; we all loved it growing up, and now it's my (step)kids' favourite meal!

Spaghetti Sauce

1 1/2 lb ground beef

1 clove garlic, minced

1 tbsp. oil

1 - 28 oz. can diced tomatoes

1 - 6 oz. can tomato paste

1/3 c. ketchup

2 tbsp. Worcestershire sauce

dash Tabasco

1 tbsp. oregano

1 tsp. salt

1/4 tsp. pepper

3-4 bay leaves

Brown garlic in oil. Add ground beef and brown. Add rest of ingredients and simmer - the longer the better. I aim for no less than an hour.

This recipe is really good when first made, even better the next day. Also translates extremely well to a crock pot.

this is my simple tomato sauce recipe. you can add stuff to it to make it like puttanesca, arrabiata or whatever.

bit of olive oil

1 onion (chopped)

couple cloves of garlic (you can chop, slice, press..whatever)

28oz can of whole tomatoes in juice (san marzano if you can get them)

bunch of parsley

oregano (if you like it)

s & p

cook the onion in some olive oil until it's translucent

add the garlic and cook until you can just smell it (doesn't take very long at all, maybe a minute?)

dump in the can of tomatoes

add a little extra olive oil if you want

tear off the top of the parsley and drop it in

add a bit of s&p

simmer over med/low for like 30 mins or so

taste it and add some more s&p if you want

I usually pop it into the blender or use my immersion blender in it but you can also just leave it how it is. if you don't blend it I suggest chopping the parsley instead of just tearing it off and throwing it in.

Wow, that is identical to my sauce! I mean, even down to the San Marzano. Spooky.

Anyone got some yummy recipes for eggplant? I can do a mean ratatouille but would like to try something different with them.

My basic go-to eggplant recipe is to cut the egg plant (Japanese or Chinese eggplant) in wedges and to sauté them with onion, garlic, cumin, cayenne pepper & salt. Great for vege tacos.

I have some growing out back, they are European style eggplants - not sure what the difference is?

cleo - I was wrong. delia did crisp duck w/ cherries on the waitrose commercial. where the hell did I get eggplant? :lol:

The ones I am growing look like the ones at the bottom - they are not really big, they are some heirloom variety - I am really stuck on growing all kinds of heirloom variety veg at the moment - my cucumbers are called something odd like stripy snakes - which sounds indelicate so I am sure that's not quite right :lol:

We have those all year long, yellow aubergine. I'm not much of a cook. But I sort of make a stir fry with aubergine and potatoes and anything else I can find in the house. Throw in some steak seasoning and a bit of butter. Eat with a side of fragrant white rice. Healthy and simple and quick and mucho flavourful.
