this is super yummy!

Mexican Watermelon Agua Fresca

SERVES 6

* 8 cups seedless watermelon, cut into chunks

* 1 cup cold water

* 2 tablespoons sugar

* 2 tablespoons fresh lime juice

* 6 small watermelon wedges, for garnish

1. Combine 4 cups of the watermelon cubes and 1/2 cup of the water in a blender and puree. Press the mixture through a sieve set over a medium bowl. Pour into a large pitcher. Repeat with the remaining watermelon and water. *

2. Add the sugar and lime juice to the pitcher; stir until the sugar is dissolved.

3. Pour the aqua fresca into 6 ice-filled glasses. Garnish each drink with a watermelon wedge.

* I like to add some of the pulp back in...

I have gooseberries in my backyard at home. I know you're in LA but do you have room to try growing your own?

I have a black thumb. I kill all plant life that comes within 3 feet of my powers. Seriously. It would be cruel to a gooseberry. :(

West African Peanut Sauce and Chicken

Chicken (enough for your purposes)

oil (about 1/2 cup)

tomatoes (to make enough sauce for your purposes)

onions, diced large (about one or two large onions)

garlic, minced (about a teaspoon or two)

salt (pinch)

maggi chicken powder - pinch or two or three (or some sort of chicken bullion)

peanutbutter (you can use the no sugar kind, but I like that little bit of sweetness)

Benin peppers (Ashanti peppers) if you can get them, but use them sparingly

cayenne

Brown the chicken in oil until fairly well cooked. Remove. In a blender, liquify the tomatoes. Add oil to the pot. Pour in the tomatoes. You are basically "frying the sauce." Add the chicken powder and salt and throw in the onions and garlic. Lower the heat after about 5 minutes and stir in the peanutbutter. (About 1 part peanut butter to 2 parts tomato sauce.) If the sauce is too thick or too thin, adjust. Add your peppers if you have them. Make the pieces big enough for people to pick them out. If you don't have the peppers, add cayenne to taste. Add the chicken back in and simmer for about 20 minutes.

Serve over rice.

Does anyone have a good tried & tested recipe for squash casserole?

I've never heard of squash casserole. I have a fabulous recipe for eggplant casserole, but can't help you with squash. I like to saute the yellow squash with onions, garlic, and Tony's (Cajun spice mix.) Yum. I think I'll make some for lunch.

Need to find my chili con carne and green enchiladas recipes -- they're stored somewhere. I don't need them anymore since I've made them a gazillion times. Oh, and my toad in the hole one too. Better with proper bangers but some of the nicer sausages available here are good in a pinch. :)

In an attempt to get myself back on topic: :blush:

Carmen's Caper

1 1/2 lbs. ground beef

1/2 c. chopped onion

1 1/2 tsp. salt

1/4 tsp. pepper

1/2 lb. spaghetti

1 - 19 oz. can diced tomatoes

1 can cream of mushroom soup

1 c. grated cheddar

Brown beef & onion in frying pan. Sprinkle with salt & pepper. Stir. Transfer to bottom of 2-quart casserole dish.

Break up spaghetti for easier serving. Cook according to package directions. Drain. Layer over meat. Pour tomatoes over top. Spoon soup over tomatoes. Cover with cheese. Bake uncovered in 350F oven for 30 minutes until hot & cheese is melted. Cover halfway through cooking if cheese starts getting dry. Serves 6.

nina - my grandma used to make squash casserole. she would boil it in water with salt & pepper. when it was soft she's mash it and mix in 1 egg, bit of butter, and crushed ritz crackers. I don't know exact amounts for the butter or crackers. then she'd bake it in the oven for a bit.
