Barbecued Potato Wedges

o 2 lbs small red potatoes

o 2 tablespoons butter

o 1 tablespoon honey

o 3 teaspoons chili powder

o 1/2 teaspoon salt

o 1/4 teaspoon garlic powder

o 1/4 teaspoon pepper

1. Place the potatoes in a 15-in x 10-in. x 1-in. baking pan coated with nonstick cooking spray. Drizzle with butter and honey. Sprinkle with chili powder, salt, garlic powder and pepper; toss to coat. What I usually do is just throw everything into a Ziploc bag and mix it around till all the potatoes are covered..

2. Bake, uncovered, at 450 for 25-30 minutes or until potatoes are tender and golden brown, stirring once.

*These are also good wrapped in foil and cooked on the grill..

I'll start posting stuff when I get home. I really don't have a very well equipped kitchen in London. It's about the size of the bathroom under the stairs at my house :lol: I'll probably post at least 3 times a week. Maybe more. Just depends on what I feel like making or who I'm cooking for.

I found it in the supermarket and bought it on an impulse. I looked it up when I got home and apparently it was a grain/seed that the Inca used to cultivate.

It's good as part of a salad - adds a bit of texture. I have tried white and red quinoa and they are much like barley/rice in the ways that it can be used - at least in my non professional opinion.

Nina - I asked the same thing on here a few years ago because I hadn't used it much. Now I use it quite a bit. I add it to salads, make cold salads with it, use as a grain to go with dinner.

Does anyone have a good tried & tested recipe for squash casserole?

I made Ratatouille for the first time last night. Everybody said it was tasty, but the zuchini, crookneck and eggplant that I purchased from the market were enormous. My dad said small to medium sized squash is the most flavorful.

Here's Julia Child's recipe that I used as a guide. I added fresh mushrooms and shaved Parmesan to mine.

omg, I (L) quinoa. I cooked it with some chicken stock. Tossed in some chopped baby spinach, shelled edamame, finely diced red bell pepper, and lemon olive oil (salt & pepper to taste). My husband liked it a lot. So I had to make more for lunch today.

Right now, I have some lamb shanks simmering in the crockpot, can't wait to go home for lunch.

Anyone have any good recipes for barley? I'd like to use it as a side dish, since we are no longer eating regular potatoes, and I don't want to make sweet potatoes every night.
