I thought there was a recipe thread that I could just bump, but I couldn't find it. *shrug*

I have a terrific craving for hummus and pita bread today and I was wondering if anyone had good recipes for this. In addition, I thought maybe a recipe thread would be cool to get good recipes that we all can try out - just put your favs on here, when you think of it. For my part, I will put my absolute friggin' favourite veggie dip recipe on here...

Val's Veggie Dip

1c. mayonnaise

1c. sour cream

1 tbsp. parsley

1 tbsp. onion salt

1 tbsp. chives

1 tbsp. dill weed

1 tbsp. Bon Appetit (this is a McCormick Gourmet Collection spice)

Put all ingredients in a bowl and mix until fully blended.

You can use fresh herbs with this, very good, but it makes it a light greenish colour and you need to use a blender to mix it.

Hare pie

ingredients

150 g (6 oz) shortcrust or puff pastry

1 hare, jointed

4 oz (100 g) bacon, diced

salt and pepper

200 g (8 oz) onions, chopped

3 tablespoons redcurrant jelly

6 prunes, chopped (optional)

1/2 stick (4 Tbsp) 2 oz (50 g) butter

1/2 cup (50 g) 2 oz flour, sifted

1 pint (600 ml) stock

1 glass port

bouquet garni

method

1. Fry the bacon and onions in a little of the butter and set aside.

2. Roll the joints of hare in seasoned flour and brown in butter.

3. Add with the prunes to the bacon and onions, and pour over the stock.

4. Adjust the seasoning and put in the bouquet garni.

5. Stir until the sauce reaches boiling point, then reduce the heat and simmer for an hour.

6. Transfer the hare and sauce to a deep pie dish and add the port.

7. Add a little redcurrant jelly if the sauce is not thick enough.

8. Roll out the pastry, putting a strip around the top of the dish, put on the lid, glaze and bake at 220°C, 425°F, mark 7 until the pastry is golden brown, about 30 - 35 minutes.

Just going off to look for my Spinach Dip recipe -- I serve it in a hollowed-out loaf of sourdough bread. Not that I am eating bread anymore due to recently discovered wheat sensitivities. crying.gif Oh bread, delicious bread, the staff of life: how I miss you.sad.gif

1 cup flour

1 cup sugar

1 cup cocoa powder

1 cup butter/oil

1/2 cup warm milk

2 tbsp coffee powder

2 tbsp vanilla essence

2 tbsp baking powder

2 eggs

A pinch of salt to taste

Mix well into a batter. Grease baking dish with butter. Bake at 300 degrees for 50 minutes.

Hummus

Ingredients:

1 16 oz can of chickpeas or garbanzo beans

1/4 cup liquid from can of chickpeas

3-5 tablespoons lemon juice (depending on taste)

1 1/2 tablespoons tahini

2 cloves garlic, crushed

1/2 teaspoon salt

2 tablespoons olive oil

Drain chickpeas and set aside liquid from can. Combine remaining ingredients in blender or food processor (or if you want the exercise, by hand with a fork and potato masher :D ) . Add 1/4 cup of liquid from chickpeas. Blend for 3-5 minutes on low until thoroughly mixed and smooth. Place in serving bowl, and create a shallow well in the center of the hummus.Add a small amount (1-2 tablespoons) of olive oil in the well. Garnish with parsley (optional).

Bouquet Garni is traditionally several springs of Parsley, Thyme and Sage tied together with a Bay leaf, and then dropped into the liquid to simmer with the liquid. It is retrieved at the end before the food is served or the sauce thickened or made into gravy. Sometimes onions or leeks are used to 'tie' the bundle together and I guess any herbs could really be used - it is the tying them together and simmering them in the broth, then removing them before the food is served that makes it the bouquet garni.

Sigh. HUMMUS RECIPE, people! HUMMUS!

Off the top of my head,

A can of chickpeas (or if you have the time, soak dried chickpeas)

garlic to taste

Tahini

Olive Oil

Put the chickpeas in a blender or food processor. Add about 1/4 to 1/3 part tahini. Blend. When it starts to get smooth, slowly add the olive oil while the the blender/processor is still going. Taste. Add salt or garlic or tahini to taste.

You can also get creative and add other ingredients like spinach or artichokes, etc.

YUMMMMMMM!

Spinach Dip

2 packages (10 ozeach) frozenchopped spinach, thawed

1/2 an 8 oz can of water chestnuts, drained and finely chopped

1 cup light sour cream

1 cup low-fat plain yogurt

1 cup finely chopped green onion (9medium)

2 teaspoons chopped fresh tarragon leaves or 1/2 teaspoon dried tarragon leaves

1/2 teaspoon sea salt

1/2 teaspoon ground mustard (I use Colman's)

1/4 teaspoon pepper

2 garlic cloves,minced

Loaf of sourdough bread

1.Squeeze excess moisture from spinach until it is dry. Mix spinach with remaining ingredients except bread (duh) in glass or plastic bowl.

2.Cover and refrigerate 1 hour to blend flavors. Cut the top off the loaf of bread and hollow out the loaf to serve as a bowl, retaining these bits to cut into dippers. Fill the bowl with the chilled dip.

BREAD PUDDING

--6 slices of bread

--2 tbsp butter

--2 cups of milk

--4 eggs

--1/2 cup of sugar

--Vanilla essence.

Grease baking dish. Line it with bread slices. Pour melted butter over it. Mix milk, eggs, sugar and essence and then pour over the bread. Let the bread soak up the mixture and then bake at 350F for 45 minutes.

Serve with a scoop of vanilla ice-cream.
