Can anyone direct me to a link that explains and will help me understand the Self-employ tax. I live in Arizona, and I will be working as in independent contractor, I need to figure out how much money to put aside for federal, state, medicar and SSI. Thanks.

I am aware of people who don't file quarterly at all, the small penalty being less than an accountant would charge.

You're not required to "file" quarterly, only send estimated tax payments quarterly.
