Timeline

I am at the stage of arranging my medical for the k1 Visa before my interview at the embassy. Will it be ok to fly and see my fiancee in the next couple of weeks in the States or will it be a problem due to the fact i am in middle of my application.

You can go to the US at any time in the process (keeping in mind the risk of denial), as long as you're there for the medical and interview.

If you go you should make sure you take a copy of the NOA2 and evidence that you will return to the UK, a return ticket and proof of ties would be helpful.
