Little help all you kind, kind people?

So I am the husband of a USC and we are bringing my biological daughter who is 17 to live with us from N Ireland. My wife petitioned her.

I work self-employed as a contractor (but my job wants me to come on board full-time), my wife is a 2nd year law student. Obviously my income is the crucial factor in sponsorship here as it is our only income. As we file jointly and have shared finances will our joint tax return and joint bank accounts suffice for sponsorship or will they look at my wife's contribution only as she is the petitioner?

BTW, in 2009 we filed well over the poverty line, in 2008 we were under the poverty level as I only worked a few days (we moved here in 2008) and in 2007 my wife filed alone but had no US income as she was studying in the UK.

So, we can show 3 years taxes as requested but they will just look at our most recent one (2009) to decide our fitness to sponsor? Should we also send bank statements, college letters, letters from my employer, just to show we are able to feed another mouth?

Mind you, if they knew my daughter, they'd raise the financial sponsorship level WAAAAAAYYYYYYYY up.
