If we realized that something might be missing in the I-130 pack (to specify: an additional sheet for the G-235a), could we just send it to the service center together with a cover letter (case number written on the sheet) asking that this be added to our file?

Has anybody done this?

The odds of the supplement you're talking about actually finding your file are pretty slim. IMHO, you'll be better off waiting for the RFE and sending it then with the RFE cover letter.

It is unlikely that they will able to connect the two so it is best to just wait and see. If they request further clarification then you can send it following their instructions. Good luck.
