Finance evidence question

I'm getting set to mail in my I-130 within a few days (woo!) and am thinking ahead to the 864. My employment over the past 3 years has been interrupted due to me getting a divorce and moving in with my mother and taking part time work so that I could take her to cancer treatments. I now am in a salaried job which -does- earn the needed 125% over poverty level. The question is, how do I explain all this to them? Should I send a continuation letter explaining the reason for the low income for the previous 2 tax returns?

Timeline

The I-864 instructions state that the 2-years-ago and 3-years-ago tax returns are optional. It says something like "You may include these if you feel it will help your case." If you feel these tax returns will hurt your case, then I wouldn't include them if I were you.
