Well I don't use a hammer :P I smash with the back of my knife chop and scrape it up with the blade...I like the the press though, it does give that lovely goo if you don't want chunks of garlic.

Ah, ok. I think I need more practice using the knife. :P

When you smash it, doesn't garlic goo get all over the cutting board? That's the most pungent part and best part, IMO.

You scrape the garlic off the board into the pot. If in doubt, use another clove. I have never had any complaints that the garlic wasn't strong enough ;)

You just smack it hard enough to break the skin, Then you can do with the naked clove what you will.

I do that when dumping whole cloves into something :)

I think you sound a bit too excited about the naked part though :jest:

Chicken soup with 6/7 cloves of garlic would totally unbalance the flavour of it. Lots of garlic is good in some dishes but not others. 3 is good for anything that you want to be able to detect all the necessary more delicate flavours. I'd use more in some types of curry for example but not all.

smashed it first then diced it to small pieces. Easier way is to put it in the mortar and pastel and smashed it in there. Hate the garlic press.

Just bought a press and a slicer from pampered chef, can't wait to try them out, I don't put enough garlic in my food because it is a PITA to slice it like I like to, and the jared stuff is just wrong.... I use it but it's just wrong...

what is a pearl of garlic? i use a lot of garlic, i'd say 4-5 bulbs a month.

If I'm cooking garlic mashed potato, i put whole cloves in it to cook with the potatoes and in the end i mash them all together. If I'm preparing something in the oven like garlic bread, or eggplant with garlic, i slice it. If i'm cooking a dish in a pot or pan i usually dice.

I rarely use garlic press because it's a bi!ch to clean.

as for how much i use it depends what i'm cooking that week. it can go from 1 or 2 cloves to 1 or 2 bulbs.
