In regards to filing for an AOS, I have a question about the Affidavit of Support. My husband, the U.S Citizen, does not and has never worked a job (he is under 21 years old)... He therefore has no tax records at all.

However we have enough savings to pass the poverty limit for 1 year. I see on the I-864 form that there is the place to declare how much savings the sponsor or the intending immigrant has. If I have Over $20,000 in my Australian bank account, will this be sufficient to cover the whole process?

We can not get a co-sponsor, and as I said, my husband has never worked.

Will savings be enough? And what is the method of proving these savings?

Also, what if my husband started working soon.. would that even make a difference given that it's so recent?

20'000 USA dollars would not be enough; you need three times the 125% poverty limit if you are using assets, so assuming it is just the two of you (no kids or other dependants), you will need around 56'000 dollars, minimum, in easily liquidated assets. Also, many embassies want the assets to be US based, so you'd need to move your savings to a US bank account (show bank statement) or purchase a property in the USA (show deeds, sales papers) or similar. Of course, if your husband finds a job and it's just a little under the poverty limit, then the 20'000 will be plenty to make up the difference.

If your husband finds a permanent job, then you should be fine, as immigration understands people change/ start new jobs,especially in those as young as you guys. He can provide a few recent paystubs and a letter from the employer stating how mcuh he earns per week/ months, and how long he is expected to be working there.

Me: Irish/ Swiss citizen, and now naturalised US citizen. Husband: USC; twin babies born Feb 08 in Ireland and a daughter in Feb 2010 in Arkansas who are all joint Irish/ USC. Did DCF (IR1) in 6 weeks via the Dublin, Ireland embassy and now living in Arkansas.
