HBK...

Go to this link and you will see the most current income guidelines:

http://www.uscis.gov/files/form/I-864P.pdf

Take how many people are in your family (including you, your fiancee, her children if she has any, your children if you have any and it will list the minimum income requirements. You income needs to be 125% of the guideline (unless you are in the military).

HBK,

The quick answer is yes, you can get another job that will qualify your income over the 125% guidelines. HOWEVER - if you get a different job 1 month before the interview the Consulate will most likely not take the new job into consideration. Being that you haven't filed your petiton yet - the time is NOW to get that other job and have some job time in it BEFORE the interview. Make sure to save EVERY pay stub and get a letter from your employer stating your positon, date of hire and annual salary.

Typically the Consulate looks at your prior year tax returns to gauge your income, however if you were a college student and now are employeed in your career he will take this into consideration.

I read that you are only 20 so if you were enrolled in college this will help in yoiur favor (if you are now working and are earning at least 125% of the minimum income guidelines). However, if you weren't in college and your full time employment wasn't enough for you to qualify at the 125% of poverty level you may be better off waiting until next year to file so you can prove financial stability to the Consulate.

If you are barely at the 125% level, you need to keep in mind all the other expenses that come with marrying a foreign fiancee. You'll have to pay for the interview fee ($131 or $355 by the time of your interview), medical fee, airline tickets to get your fiancee to the USA, AOS fees (they are over $1,000), costs for her to get a drivers license, clothes, etc...

I'm not trying to put a damper on your hopes, but I know you posted earlier about the costs of the I-129F. This is just the beginning of the iceberg and there are many more fees to come. This is not an inexpensive process, so I would advise that you carefully consider your finances before filing your petitiion.

CURRENT income usually trumps all else, however the income requirements for the K-1 visa are a subjective thing, there is no "goal line" per se. In theory you could start a new job today and qualify tomorrow with adequate documentation from your new emplyer. at any rate, you do not need to qualify for THIS years guidelines with last years income. It is probably a bt naive to think you would get a new job today and qualify tomorrow, and it is a consular discretion thing anyway. manilla is not an easy consulate in this regard. I would feel better having at least SOME history of employment, though not necessarily a year. I cannot be more specific because it is not specific.

Be sure you are using the 2010 guidelines, they increase on March 1 each year. I haven't seen the new ones yet but I imagine they have been published. Also, just an aside, be aware, to actually live and support two people on the guideline income is very difficult (or 4 people, or 6 people) 125% of poverty level makes for a pretty difficult life.
