I made one copy of all original documents (not the I-130 or G-325). I went and had everything notarized too which the officer on the day said was very helpful. It isn't required though.

Definitely take all your originals. They took the copies of all of the originals and then gave the originals back to me. By all means, make as many copies as will satisfy you :) Always better to be over-prepared in this instance but they will only need one. I needed two copies of things but that was because we filed a CRBA at the same time as my I-130. So unless you have more than one application going, you'll be super-prepared!!

2 copies should be fine and then when you go to the interview bring the originals but make sure you have additional copies of the originals so you don't have to leave the originals with the embassy.

I made 1 copy of all originals to send in (in Mexico we send in our I-130 petition) except the I-130 and G-325A were the originals. And then I kept 2 copies of the entire packet in the same exact order for my personal records. It might be ####### on my part, but I don't care..hehe!
