Now that my fiance has been here for a few days we have began the paper work for the AOS. I was looking over the I-485 and had a couple questions about it. There is a part that asks for "Current USCIS status" and it's expiration date. Is that supposed to be the status on the NOA2 and the NOA2 expiration date? Also, for supporting documents do we need to include both the NVC Letter and NOA2?

no, not the expiration on NOA2 butit would be the expiration date on the I-94 She received her current status the day she entered the USA

NOA2 from USCIS not the letter from NVC is needed
