Can Interview be delayed

Timeline

My Fiancee is visiting me on her B2 visa. Her visa expires in September. I am submitting the I-129f petition this week and we are assuming that it will take around 4 to 6 months to get the 2ndNOA. If the process goes faster can the interview be delayed for several months if she chooses to stay here on her B2 visa for a couple months before she returns home to go through the interview process.

How long is the US part of the K1 process good for before the Interview has to be completed?

Once I-129F has been approved, petition is valid for 4 months - but can be extended at the CO's discretion.

I would assume that if you file your I-129F this week to VSC you'd be looking at May- June for approval (assuming no RFE's), then on to the NVC for processing. Assuming no AP, your petition would be at thge Embassy 1-2 weeks later (puts you at end of June). According to the Embassy portal, interview dates are available 1-3 weks later (after completing packet 3 info):

So - if your I-129F arrives in South Africa at the end of June, your petition would still be valid until the end of October - plenty of time for your fiancee to return in September.
