I was wondering if all non original documents that I'm going to bring to the interview have to be certified copies or can also be simple copies (in specific the USC birth certificate). Can I use form FC-029 to avoid having them certified? Who's going to sign that form, the interviewed or the petitioner?

It's usually best to bring "originals" with you - however they should all ready have copies of items you sent prior with the petition/application.

The FC-029 just tells them you can produce originals if you need to - but what happens if your at the interview and they ask for the originals?

With that being said, you shouldn't need the original USC birth certificate at the K-1 interview.

Did the embassy your going through specifically ask for it?

My Advice is usually based on "Worst Case Scenario" and what is written in the rules/laws/instructions. That is the way I roll... -Protect your Status - file before your I-94 expires.

WARNING: Phrases in this post may sound meaner than they were intended to be. Read the Adjudicator's Field Manual from USCIS

no, they want a certified copy of it, but my fiancee has her BC at her grandparents' house (in another State) and it will take a while to have a certified copy sent over here. she has a simple copy with herself, but I guess it won't be enough.
