Chris, , for you. I bet she feels the same. I remember that the trip took forever ( it was just 10 hrs + the immigration part which was actually quick in Miami, I was the only one with a proper visa, all the other people in the office got sent home)

today is my friend's bday so I have peeps coming over for din. my friend requested roast chicken and mashed potatoes soooo that's what I'm making. made chocolate banana cake with caramel buttercream for dessert.

Amby, how do you make the chicken? I usually drip at the end the juice of several lemons over it, makes a nice sauce. Or I put cut carrots with it and let them roast, that way you have the veggies as well

I salt and pepper the inside and then stuff with quartered lemons and lots of herbs. Then put butter and herbs under the skin. Truss it. Salt and pepper the skin and then sear it all over. Pop in the oven to finish.

Amby, do you mind if I ask you some stuff about cooking now and then? I don't find the stuff I'm used to here and have to substitute and find new recipes.
