i actually love black eyed peas with cornbread. my mom grew up in the south and is an awesome cook, so i request it of her every year. she agrees if i buy the groceries.

Thought it would be more appropriate to ask, what are you drinking? Nothing like starting off the New Year with a miserable hangover.

Astronomically, the day we celebrate New Years is actually uneventful. It's an arbitrary day. The earth should move outward from the sun like a yoyo, the day it stops and returns would certainly be a New Year. The really main event of this time of year, starts off a new tax period. If it wasn't for taxes, businesses could just go on from month to month, but because of this new tax year, have to compute all profits or losses for last year and prove that to the government. Then start a new set of books.

In this light, not easy to be happy with a new year.

First thing I have to do is to collect sales tax for the state, was paying an accountant to do this for me, but he was making more money than me. Have to read all the new regulations, if I didn't collect the taxes, have to pay that out of my own pocket because of some new regulation. That has to be in well before January 31st. If I am late or even a penny short, can be severely fined. I have to do this for free to stay in business, when I send that check off, think of others things I can use that money for, like paying for my property taxes or insurance, or utility bills that are also expenses in running a business. After that, it federal than state income taxes.

Ha, Happy New Year, think I will get drunk and stay drunk, screw them. Same old sh!t year after year.

Some kind of cake for late tonight (hubby's NYE tradition is a large, round, thin, one-layer cake) and some hot drinks.

For tomorrow (if I still have time):

black-eyed peas, rice, collard greens (from my dad's side - Lowcountry SC)

chicken, sauerkraut and dumplings (from my mom's side - Ohio w/ German influence I guess)

Recipes: gonna wing it. Allrecipes.com, etc, are my friends.

I'm the USC.

I'm doing no cooking, but I am guessing my MIL will be making Pernil (Pork Roast), arroz con gandules (rice with pigeon peas) and pasteles (plaintain dough filled with meat, yuck yuck yuck). I'll stick with the pork and beer. :)

I made Hoppin John's yesterday for the first time and it was outstandingly delicious! We had leftover Honey Baked Ham and used that as the hock.

Here's the recipe for anyone interested:

Hoppin John

1 1/2 cups of dried black-eyed peas (I used 2 cups because the package was 16oz)

1 onion chopped (I sliced mined and sauteed it in a half stick of butter along with about 7 cloves of chopped garlic)

1 pound ham hocks (leftover Honey Baked Ham)

1/2 teaspoon crushed red pepper flakes (I just used one packet of crushed red pepper we get from the pizza parlor)

salt and pepper to taste

4 cups water

1 1/2 cups long-grain white rice (I steamed some Jasmine rice separately)

1 cup shredded smoked Cheddar cheese (didn't use any cheese)

Brought the beans to boil in water by themselves, then let them simmer for about 25 minutes.

Sauteed onions, garlic, crushed red pepper in a half stick of butter (Medium heat until garlic turned light brown)

Drained the beans and rinsed them in cold water, then placed the sauteed onions, garlic and pepper into the crockpot, then the ham. Added the bean and about 3 1/2 cups of water...then cooked it for about 6 hours. The flavor of the red crushed pepper came through into the black-eyed peas! So full of flavor! :)

Served with corn bread.

Of course I had to ask Dave what Hoppin' Johns are. Now he's pestering me to make some, telling me how much he loves it so... thx for the recipe. :thumbs:
