These are awesome!! Thank you!! I especially love that there are non-Canadian posters. :)

These are my all-time favourite Christmas cookie recipes:

THUMBPRINT COOKIES

¼ cup butter or margarine

¼ cup shortening

¼ cup brown sugar (packed)

1 egg, separated

½ tsp vanilla

1 cup flour

¼ tsp salt

¾ cup finely chopped walnuts

strawberry jelly

Heat oven to 350o.

Mix butter, shortening, sugar, egg yolk, and vanilla. Work in flour and salt until dough holds together. Shape into 1 inch balls.

Beat egg white slightly. Dip each ball into egg white then roll in nuts. Place on ungreased baking sheet. Press thumb deeply into centre of each ball.

Bake about 10 minutes or until light brown. Immediately remove from baking sheet. Cool, then fill with jelly.

Makes 3 dozen cookies.

Some yummy breakfast recipes

French toast Raphael

Ingredients

* 6 cups white bread, crusts removed, cut into 1 inch cubes

* 6 ounces cream cheese, cut into small cubes

* 6 eggs, well beaten

* 1 cup milk

* 3/4 teaspoon cinnamon

* 1/3 cup maple syrup

Directions

Put half the bread into the bottom of a greased 9 x 11 pan.

Dot cubed cheese on top.

Cover with the rest of the bread.

Combine remaining ingredients and pour over bread mixture.

Cover and refrigerate overnight.

Bake at 375 degrees for 45 minutes in the morning.

Drizzle with more syrup over top when finished baking.

Serve while hot.

Another variation is to add a layer of your favourite fresh fruit.

(peaches, blueberries, apples)on top the first layer of bread cubes.

Easy overnight sticky buns

1 (25 oz.) bag frozen bread dough balls

1 (3 oz.) box vanilla pudding (not instant)

1 1/4 c. brown sugar

3/4 c. butter

1 1/4 tsp. cinnamon

3/4 c. chopped nuts (pecans or walnuts)

Put frozen rolls into a bundt pan (or spring form pan). Sprinkle with pudding mix. Melt butter, add sugar and cinnamon. Cook until sugar melts. Boil until sugar dissolves. Add chopped nuts. Pour mixture over the rolls. Cover tightly with foil. Leave on the counter overnight.

In the morning, uncover and bake 20-30 minutes at 350 degrees. Wait 5-10 minutes, then invert onto a serving platter.

Christmas Morning Wifesaver

My mom makes this every Christmas! Sooo good!! My hubby loves it! For the two of us I 1/2 the recipe.

Superb! Make the day before and pop in the oven in the morning. Serves 8.

Ingredients:

16 slices white bread, crusts

removed

16 slices Canadian back bacon or

ham

16 slices sharp cheddar cheese

6 eggs

1/2 tsp. pepper 2 mL

1/2-1 tsp. dry mustard 2-5 mL

1/4 cup minced onion 60 mL

1/4 cup finely chopped green pepper 60mL

1-2 tsp. Worcestershire sauce 5-10 mL

3 cups milk 750 mL

dash Tabasco

1/2 cup butter 125 mL

Special K or crushed Corn Flakes

Instructions:

Set 8 pieces of bread into a 9" x 13" (23 x 33 cm) buttered, glass baking dish. Cover bread with slices of back bacon. Lay slices of cheddar cheese on top of bacon and then cover with remaining slices of bread to make it like a sandwich. In a bowl, beat eggs and pepper. To the egg mixture add dry mustard, onion, green pepper, Worcestershire sauce, milk and Tabasco. Pour over the sandwiches, cover and let stand in fridge overnight. In morning, melt butter, pour over top. Cover with Special K or crushed Corn Flakes. Bake, uncovered, 1 hour at 350 deg.F (180 deg.C). Let sit 10 minutes before serving. Serve this with fresh fruit and hot cinnamon rolls.

Kathryn, Im off for 3 days this weekend and I think I really want to try to make this dessert. It looks awesome! I actually already have the maraschino cherries and coconut. When it says 1 tbsp cream, :blush: what exactly is cream? Plz forgive my lack of cooking terminology!

This is a no-bake cookie my Mom used to make at Christmas. She always had us help her and they really are great for children to help make.

Cherry Surprise

2 cups icing sugar (confectioner's sugar in the US)

1/2 cup butter, creamed

1 1/2 cups fine grated coconut

1 Tbsp cream

1 tsp almond flavouring

1 small bottle maraschino cherries

12 graham crackers, crushed

Blend together all of the ingredients except the cherries and graham crackers into a thick paste. Using a teaspoonful of paste at a time, wrap the cherries individually so they are completely enclosed in the paste. Roll the ball of paste with the cherry inside in the crushed graham crackers until coated. Set in fridge to harden. Enjoy!

Just a warning, my mother is quite skilled at cooking, and says these are the hardest cookies she's ever made. Selling these cookies at the local market paid for most of my childhood Christmas presents, something I didn't know until recently.

This is our secret family recipe, complete with all my mom's tricks to make it slightly easier to not burn/destroy them.

Grammy's Lacey Coconut Cookies

2 and ¾ cups grated coconut (one 7 oz. can of Long Angel Flake)

1 and ¼ lbs. brown sugar (approx. 3 cups) (light brown sugar if possible)

1 cup molasses (or King Syrup)

1 and ¼ lb. flour (approx. 4 cups)

12 oz. melted butter (I melt 8 oz. real butter and 4 oz. Crisco)

Mix all ingredients.

Refrigerate.

Shape in to balls to put on pan. [see Tip #1]

Bake in 350 degree oven for 7 – 9 minutes.

Tips:

1) Balls should be a quarter in diameter or smaller. Flatten ball slightly before baking. The secret is, flatten them, then push your thumb down in the middle to make a thumb-sized dimple.

2) Rotate tray half-way through baking.

3) Let cool slightly prior to removing cookies from sheets. This lets the cookies slightly congeal - do not let them completely cool or they will shatter instead of peel off!

4) Cool trays entirely between baking!

5) Heavy trays and parchment paper can help if you're having difficulties.

Yield:

16 Dozen

Getting them off of the pan successfully is the most challenging part.

If you do it correctly, they are flat, golden, and look like snow flakes. When they cool, they harden and turn crunchy.

Only press down slightly, don't push your thumb in very deep. Forgot that part. :)

Butter Tart Squares

Base: 1/2 cup butter

1/2 cup icing sugar (confectioner's sugar in US)

1 1/2 cup flour

Topping: 1 1/2 cup brown sugar

1/4 cup melted butter

1 tsp vanilla

2 eggs, beaten

1/2 Tbsp white vinegar

1/2 cup raisins

1/2 cup walnuts

(or you can use 1 cup of either raisins or walnuts)

Base: cream butter and sugar together together then cream in flour. Pat mixture into base of 8" square cake pan. Bake at 350 F for 5 minutes.

Topping: mix together all of the ingredients until well combined. Pour topping mixture over baked base mixture. Bake 350 F for an additional 30 to 40 minutes.

Cut into squares when cool.
