yeah I will do that early tomorrow.... it says you have to cook the bird right a ways after thawing it in cold water... we don't normally eat till after 4 or 5 pm anyways...

I wonder why they say that? It seems to me that once it was thawed you just put it back in the fridge and it would be fine.

probably something to do with bacteria....

No doubt, but why would there be a bacteria problems if it's ice cold?

Heck, I don't care about the cooking guidelines. I know the moment you take it out of the oven and the turkey reach room temperature, airborne bacteria starts to grow on the turkey. Bacteria that was dormant on dust particles could very well be deposited on the turkey when you move around the kitchen.

Bacteria will still multiply in the cold but not as rapidly. Their metabolism diminish. Bacteria becomes dangerous when there are alot of them. Their wastes are what toxic.

Anybody know the secret to making tasty mashed potatoes using the red ones and leaving the skin on?

I just read this...

If you thaw food with cold water, you must cook it immediately—it would take too long for it to cool to a safe temperature if you put it in the refrigerator.

I'd still cook it within 24 hrs and not worry, but that's me. On a side note, I am showered, shaved, and ready to stuff my turkey.

Turkeys thawed by the cold water method should be cooked immediately because conditions were not temperature controlled
