only 1 crack on my cheesecake this time, and I did everything, didn't beat much, used room temperature ingredients, didn't open the oven all night, oh well..

all i can think is maybe I overbeat. But when I start mixing sugar with cream cheese it's impossible not to beat too much because it takes forever to mix them.

maybe i should start mixing the milk with sugar first then the rest.

nah you have to do sugar and cheese first. then add the eggs one at a time, and then the rest of the stuff at the end

eta: I let my cheese and sugar beat for about 12 minutes

I'm beating by hand since the recipe says do not overbeat. it says to add the eggs 1 by 1 at last. maybe next time I should try baking it on a bed bath. I've been reading online and it says that if you cook in bed bath it can preven6t cracking. But then i don't know if I should cook the same temperature for the same amount of time. I cook 350 for 1 hour and the recipe says leave in the oven for other 6 hours.

Also I've always used lowfat ingredients and this time I tried with all the regular stuff, and still cracked.

my last one didn't crack, just because I didn't bake to other people. things were out of the fridge for over 4 hours, so very room temperature and I didn't beat much. it was kinda soggy, I don't know, I prefer the taste when it cracks, at least it grows more.
