what evidence do u have to submit with the i-864 and how much of it....is the 2008 tax returns good and 1 month paystubs

The most recent year's tax returns (usually 2008 at the time of this posting) are required. If you send tax returns, you must also include copies of all W-2s, 1099s, etc. If you submit a tax transcript (available at no cost by calling the IRS), you don't need any extra documentation.

Paystubs are not required. Per the instructions, "You may include evidence supporting your claim about your expected income for the current year if you believe that submitting this evidence will help you establish ability to maintain sufficient income." For example, if you got a new job this year and are now making substantially more than you did in the previous tax years, it's a good idea to provide supporting evidence like pay stubs. Also worthwhile for this purpose is an employment verification letter if your employer will provide one.

Improved USCIS Form G-325A (Biographic Information)

Form field input font changed to allow entry of dates in the specified format and to provide more space for addresses and employment history. This is the 6/12/09 version of the form; the current version is 8/8/11, but previous versions are accepted per the USCIS forms page.
