I was just looking at the processing times for the EADs and saw that you can apply in person? How would my husband go about doing that? Where do we find our office, what should he bring, etc?

I don't know if this background helps, but he entered on a K-1 and we got married about a month ago. We've already filed for his AOS and got our NOA1 for the end of October. The reason why we didn't file for the EAD along with the AOS was because we wanted to avoid the gap that would happen between the EAD expiring and his greencard being aproved.

Unfortunately no, you cannot apply for an EAD in person. They used to allow for you to show up in person and request a temporary EAD if the one you had applied for had not arrived within the 90 day processing time, but they no longer allow you to do that either. Even temporary EADs are not processed at local offices anymore.

I am not quite sure I understand your reason for not applying for the EAD with the AOS. The EAD is valid for a year and is usually approved within 90 days. While the AOS can be approved quickly -within a few months - it can also take a long time (up to 2 years or more). There is no 'gap' between an AOS and an EAD.

Regardless, you will probably want to submit the EAD application now. There is no fee as it is based upon an existing AOS application. You may get the green card approved first or you may get the EAD approved first. Your husband is not able to work until he has at least one of those in his hands. There is nothing to lose and everything to gain.

You are confusing the "gap" which would occur if you filed for the EAD before getting married. Filing for the EAD after marriage and with the AOS is free and usually (but not always) results in an EAD before a green card. My wife got her green card first.

No you cannot apply for an EAD at a local office. You CAN apply for an AP at a local office. Bring your I-797C if you do so.
