The interview is for my AOS in which my husband and I are both to appear and show proof of our marriage/relationship.

Make an InfoPass appointment at the USCIS office where your interview is scheduled. http://infopass.uscis.gov/

Improved USCIS Form G-325A (Biographic Information)

Form field input font changed to allow entry of dates in the specified format and to provide more space for addresses and employment history. This is the 6/12/09 version of the form; the current version is 8/8/11, but previous versions are accepted per the USCIS forms page.

well I doubt they would think that it is an emergency situation so I don't think rescheduling will even be an option in this case. :(

"Emergent" is not the same as "emergency." It means arising unexpectedly. You didn't expect them to schedule the interview when your husband was going to be out of town; therefore, you have an emergent situation. I'd suggest making the appointment.

You make the appointment, go in at the scheduled time, and explain the circumstances that necessitate rescheduling the appointment. Bring the I-485 receipt notice (NOA1), appointment letter, and any documentation of your husband's trip.

You had no idea when you made the plans for this trip that you had an AOS interview in your future?

Reschedule the trip. What's more important in the long run?

He scheduled the trip before we filed.... we'll figure it out. I don't want to risk anything personally. :)

You are telling the OP that he has an emergent situation because the interview came unexpectedly and he has a planned trip. If that is the case, are you saying that anybody can plan a trip and then have the interview re-scheduled because the interview came up unexpectedly?

To my understanding, Emergent situation refers to the trip, not the interview. I doubt that the trip was urgent and came up unexpectedly. The interview date will always be unexpected.

How is the interview unexpected? It's pretty much the norm to have an interview, and have it within a certain time frame. I don't know what kind of trip this is-but I certainly wouldn't be making vacation plans during a time that I knew there was a good possibility I would have my USCIS interview scheduled.
