why not just unsalted butter?

is unsalted butter lard? i am not zackly the martha stewart type...i am more the female red green of the kitchen...hehe

Its just that lard in something other than a pie = :dead:

i hear ya...my mom always used tenderflake...i am carrying on her tradition...she was the bestestest pie maker ever...alas..i think i have failed her! (looks heavenword) sorry mom...sniff sniff

there is this little place on Olvera Street in LA that makes the best beans we assume it is because they use lard... mmmm... i got my whole family addicted to those beans now too ..lol they can't get them like that where they are in Canada ..

you know what works for me? mild chorizo sausage instead of any other fat. I'm assuming refried beans right? Oh... and don't forget to add a little cotija cheese before serving...

nope, lard is pigs fat

pig fat?? pig fat???? UG UG UG....i have been baking with pigsfat...now ya tell me!!!!!...i am one of those people that when i eat meat i pretend it is man made...hehe...now i find out i am chowing down on pigfat...how rude and irresponsible of me...hehe

well I am perfectly happy with the lard ..lol it is a good thing that place isn't closer or the hubby and I would be 500 pounds each :lol:

Some of it is altitude. you are likely at a higher altitude.. also maybe the labels of things are similar but the actual ingrediants are different-- regional English differences. Plus, I'd check your oven. maybe it's a bit off.

If you are using flour in your recipes, US flour is much softer than Canadian flour. Canadian flour has a higher gluten content and you can use All Purpose flour for general baking and bread, but not in the US. In the US use a bread flour with a harder wheat flour to have results similar to what you would have in Canada. I don't use general flour in the US for anything except biscuits. I actually cheat with pie crusts and use the frozen ready to bake pie shells and then just put in my own fillings.

K ... think you're on to something. the gluten content can make/break a crust/bread. my adopted mom only used canadian flour ... for a reason. when she was in need of a US version ... she went nuts and apologised cause the crust/bread wasn't the same. I think a different flour will make a difference.
