My dad is my cosponsor and I just realized he put his life insurance amount on the I-134... does that need any kind of documentation with it? Seems like it would need some kind of proof but I'm not sure what that would be.

Yes, he would need to support the value with some documentation. From the I-864 instructions ( since the I134 doesn't give you much):

The owner of the asset must include a description of the asset, proof of ownership, and the basis for the owner's claim of its net cash value.

IF he is really planning to use it an an asset qo qualify him as the co-sponsor, YES. If his income is sufficient it doesn't have to be proven (and it will not be considered) but wouldn't have to be mentioned either. If his income is sufficient he could leave that blank
