I have been losing weight - in fact I can no longer wear my size 20 jeans coz they can be tugged off zip and button closed... soooooooooooooooooo am wearing size 18 and aim to get to at least size 16 by the time I get to Houston. Thanks to some awful test results that scared the heck out of me the day before (which turned out to be not bad after 2 more tests yesterday) I have been advised to be sensible about the weight loss programme I am into by having one meal a day with grilled chicken or fish along with veggies as I could do without a nutritional imbalance.... sooooooooooooooooooooooooooooooo HELP with recipes puhleeze :help:

Paul and I met on the Bazaar on the 14th January (he joined my progressive rock forum that day)

July 3rd he flew to England to meet me

We fell in love while he drove all over the place coz I cannot read maps (we were supposed to go to Ingleton - but touched Darlington 4 times, Pierce Bridge 6 times, Scotch Corner twice and Bernard Castle twice and we never did make it to Ingleton)

It has been so long and so much has happened in between...

Lost my father 8th January 2007 (all dates are a blur after this)

First off congrats on your weight loss!!! :thumbs: If you are only having one meal that isn't good for you, you should have at least three balanced meals a day to stay healthy. Even if it is just a toast and yogurt for breakfast, and a small sandwich for lunch. Starving yourself never works well for weight loss, sure it is a quick take it off fix but it can come back even quicker. You need an all around healthy balanced diet.

My suggestion for tasty fish or chicken, is easy add a little olive oil, rosemary, any other spices you like and lemon juice to either meat and bake/broil it. Nice too, to wrap it in foil with some fresh chopped veggies, yellow squash, zuchini (corguette), broccoli, carrots are all great steamed in foil and a little rice on the side.

Congrats on the weightloss! Chicken I'm not too great with, but fish I can do.

What kinds of fish are readily available to you? My favorite grilled fish recipe involves fresh alaskan salmon. My grandfather vacations there each year and brings back SOOOO much. So here's an easy one.

Filet and debone your salmon (portions depend on how many people are joining you of course)

Heat your grill (can also be done in a skillet with a bit of oil, or butter)

while your coals warm, wrap the actually "tray" of the grill in aluminum foil

Place tray back over hot coals

While you wait for the grill to reach a good temp, cut your salmon into bitesize pieces (which also helpsyou find hidden bone) and roll them lightly in lemon.

Place them on the aluminum foiled grill-top and sprinkle with lemon pepper and "season-all". Add pepper if you like.

Cover and cook for 5-10 minutes. Turning as each side browns.

For crispier salmon bites (my personal favorite) cook 15-20 minutes untill each side crisps.

Let cool on a plate, then drizzle with lemon sauce.

Serve with homemade mac, mashed or baked potatoes, corn. Pretty much anything.

These bites also reheat very well in the microwave or oven for a delicious salad for lunch the next day.

Hope that wasn't too confusing. It really is simple and delicious after you make it the first time. Everythign is pretty much to taste and appetite, thus no measurements. And it can be done with any number of fish, never tried it with chicken but it doesn't sound bad. Let me know how you like it :D
