how do I track the petition process?

I read that there is a way to track the petition on the USCIS website with the code received with the NOA1. how do I do that?

Also, I read that there's a way to activate your email account so that all correspondence is sent via email. Again, how do I do that?

Here's the website you track from:

https://egov.uscis.gov/cris/Dashboard.do

Either you can just do basic tracking without an account, or on the left hand side you can sign up for one.

Once you have, and you log in, it will take you to your portfolio.

You can add your case number and it will keep track of it on your account.

I believe it automatically gives email updates once you add it, but you can check by looking at the column labeled "E-mail Alert" and making sure it has a Y.

Touches do not get emails, but big things like Requests for Evidence and the NOA2 get emails.

A touch is just when someone physically touches the file.

It can be to take something out of it, it could be going from one desk to another, etc.

It just means someone physically handled it.
