Timeline

Wondering what exactly are they looking for at the interview? At this point we have been approved with an NOA2 and have already proved that we have met....

We have tons of evidence:

emails

phone records

Western Union Receipts

Even an engagement ring receipts

Pictures of traditional engagement

Worried because we have only met once but I was with my fiance the entire time of that trip, about three weeks, not sure if Embassy will look @ that suspiciously, any ideas?

Are you asking what you need at embassy?

The NOA2 approval is nothing more than proving to USCIS that you have met in the past 2 years face to face and that you are eligible to marry and that you (USC) are eligible to bring someone in with a k1 visa.

The embassy stage is where you need to PROVE you have a BONAFIDE relationship so you will need to provide this evidence, the things you have listed are exactly what you will need. Except for the Western Union receipts, some people say use them some people say don't, as it can be construed as paying for a bride to some consulates.

I understand in some consulates that Western Union receipts are a very bad thing. In others they are pretty meaningless. Either way, I would probably not give them.

What is customary in Sierra Leone? Is it customary for a man to help support his fiancee after the engagement? If so, then Western Union receipts from the man to the woman wouldn't be viewed suspiciously. On the other hand, Western Union receipts from the woman to the man might be heavily frowned on. It might not necessarily look like she's buying a husband, but it might very well look like he's scamming his future bride.

You've been together for three weeks in a single trip, correct? You had a traditional engagement ceremony during that visit, right? Is that customary in Sierra Leone? If a longer period of engagement is the norm, then the consulate may very well look on the one visit and engagement with a great deal of suspicion.

The bottom line is that if it would seem unusual to a local person, then it's going to seem unusual to the consulate. Try to view it in that light, and you'll get a better understanding of what problems you might have at the interview, and what you need to address to overcome them.
