Do the copies that I make to send with the I-485, EAD and AP need to be color or are black and white ok (ie. Passport pages, NOA2, etc)? And should I send a real copy of the birth certificate, or a photocopy? TIA!

The term 'photocopy' generically means 'black and white.' You can, of course, make color copies if you like - some things turn out better this way, but either is fine.

Never send original(s) unless specifically asked to do so - and they rarely ask you to do so. Originals may be asked for if/when an interview is scheduled.

Well, it is not a requirement that the copies have to be colored. I sent everything in black and white. I sent two originals though - My husband's Letter from Employer and the certified copy of our Marriage Certificate. We are going to request for a more current Letter from Employer when the interview comes and we're bringing the original marriage certificate so I didn't mind sending in those two original documents....

B&W is fine. DO NOT send originals, send copies. They can ask for the originals if they want to see them at your interview. One exception to this is I sent an original marriage certificate (I got several) but it is probably not needed, a copy should do fine.
