Quick question,

On the DS-230 there's a section where it asks for the intended date of entry into the US and I assume this is to be left blank if unknown.

We had originally planed for a certain date but have recently changed for a date two weeks earlier.... Will this be a problem for any point in the process? I know this section didn't influence the visa but I'm not sure if it will cause a problem with customs or AOS?

I think the OP is confusing the DS-156 (Nonimmigrant Visa Application) with the DS-230 (Immigrant Visa Application). The question about intended date of entry is on the 156, not the 230.

Improved USCIS Form G-325A (Biographic Information)

Form field input font changed to allow entry of dates in the specified format and to provide more space for addresses and employment history. This is the 6/12/09 version of the form; the current version is 8/8/11, but previous versions are accepted per the USCIS forms page.

I'm sure the OP is talking about the DS-156. The form is required for the K1, but the question on the form is really only relevant to something like a tourist visa, where specific travel dates are planned. A K1 visa applicant has no control over when their visa will be approved, and can't really make concrete travel plans.

I just put a date that I thought would be a couple of months after the interview.

12/15/2009 - K1 Visa Interview - APPROVED!

12/29/2009 - Married in Oakland, CA!

08/18/2010 - AOS Interview - APPROVED!

05/01/2013 - Removal of Conditions - APPROVED!

I was just looking into this issue myself... So to summarize and clarify, DS-156 and DS-156K are required for a K-1 (fiance/nonimmigrant) visa but DS-230 is not, correct?

It depends on the consulate that will be issuing your visa. Many—I'd say most—require at least DS-230 Part I, if not the entire form, as part of the Packet 3 requirements.

Although the K-1 is technically a nonimmigrant visa, it leads by design to adjustment of status to lawful permanent resident. Hence, it's treated like an immigrant visa. It can only be issued by consulates that process immigrant visas, and the clearance procedures utilized are IV procedures, not NIV. But as it is technically a nonimmigrant visa, the application process often includes elements from both the IV and NIV processes.

Edit: I just noticed that your fiance is from Ukraine. Kiev is one of the consulates that does not require the DS-230 for K-1 applicants.
