After you have started the process for the K-1 visa, does this mean I can not see my fiance until the visa has been approved ? If you have plane tickets and a job to go back to, would this work ?

This gets asked daily. Normally, yes, you can visit but need to show a reason you will return. A letter from your employer, proof of employment, return tickets, etc. all go a long way to show you have no intention to immigrate illegally. The more the merrier. A home mortgage or apartment lease is good also.
