I will be traveling to visit my fiance in October. I expect her interview to be around February or March. I would like to use this opportunity bring her the Affidavit of Support and supporting documentation regarding my income. Would this be okay or must the documentation of income be dated closer to the interview?

The pay stubs should be as close to the interview date as possible. The employer letter should be very recent to the date as well.

There is no specific rule for the supporting documents for the I-134. But I would have them dated closer to the interview. If I recall correctly your fiancee is in Ukraine? Yes? I know from experience there is no questions regarding an affidavit dated and supported within 60 days of the interview, beyond that I cannot say. I would say they definitely want it more current than 5 months.

Questions like this can be very consulate specific and it helsp if you list the country your fiancee is from. I thought I recalled you saying it was Ukraine.
