i love saltfish! my favorite is saltfish rundown.....but i love saltfish anything...fritters, cabbage and satlfish, saltfish and banana, yams, ackee.....and YES, mi can cook it!

I love my man's fried fish! and all the goodness he surrounds it with on the plate...makes my mouth water. and soursop ....don't get me started on the fruit. love it.

i can cook...he calls it california style. but i'll leave the jamaican food to him, gladly!

Ok now that I want some Jamaican food, lol. Can someone teach this white american girl how to cook brown stew chicken. I can cook my behind off normally but have only tried a few JA dishes. :thumbs:

Ok y'all i'm bored my nerves taking over so of course i'm just thinking about Jamaica (my hubby :yes: ) and the food that i miss so much, (i cook Jamaican food all day) :yes: my favorite is JERK CHICKEN! from the street corner :lol: what's your favorite if any and can you cook it?

I can cook it all but we no longer eat meat and my specialty was curry goat , oh how I miss goat LOL. my favorite dish is Ackee and saltfish I could eat it all day everyday if you let me. Between Hubby and I we have Haitian Jamaican cook offs so we its always lively inna mi yaad!

I made brown stew chicken for my family one night - My nephew (3 years old) ate 4 chicken legs.

DJ makes saltfish with spaghetti, which I LOVE

Oh god sus 4 LEGS!! :rofl::wow:

of course :thumbs: but you can't overdo it, too mush ketchup will make it too sweet and you won't taste the seasoning :whistle:

ok this is my own Jamerican Brown stew recipe :whistle:

1lb chicken leg quarter (maybe 2lbs if you greedy or a whole chicken :lol: ) chop and cut to desired size if you like small peices

1 bottle gravy master browning sauce

1-2 peices of freah thyme

1 stalk of green onion(eskellion)

vegetable oil(maybe 1/3 cup or just enough to cover the bottom of the pot)

1 small onion

1 small tomato

black pepper (maybe 1/2 teaspoon)

fresh garlic or garlic powder

bell pepper or scotch bonnet pepper (any kind if you like peppers)

seasoned salt (i use morton or lawrys)

ketchup(as desired not too much)

ok now wash your chicken then put your desired amount of dry seasoning directly on the chicken( garlic powder, seasoned salt and black pepper) then add the browning sauce to the chicken (maybe a tablespoon depending how much chicken you have and how dark you want it)pour some oil in a pot or sauce pan (whichever one you prefer use a strong one you don't want to use the thin one since it will burn your food quick) heat the oil very hot :yes: , then add the seasoned chicken and DO NOT LOWER THE HEAT UNTIL THE CHICKEN IS BROWNED AND STIR THE CHICKEN AS IT BROWNS then once you brown the chicken(no longer look raw) add the fresh seasonings(garlic, onion , green onion, tomato, pepper and thyme) and lower the heat cover the pot and cook until the meat is tender(about 30-45 minutes) then add a small amount of ketchup to thicken the gravy then stir and let it simmer(maybe 5 minutes) AND THATS IT! :thumbs::thumbs: JAMERICAN BROWN STEW :dance::dance::dance:

Not joking...I don't even remember the last time I cooked. My husband does the cooking.

Here is mine:

3 lb. Chicken

2. 1 stalk scallion

3. 2 cloves garlic (chopped)

4. 2 cups water

5. 1 tsp. Salt

6. 3 regular sized carrots

7. 1 c. soy sauce

8. 1 sprig. thyme (chopped)

9. 1.5 tablespoon vegetable oil

10. 1 medium onion (Chopped)

11. 2 Tomatoes (diced)

12. ½ oz lime juice

13. 4 tablespoon ketchup

14. flour and dry jerk seasoning, mixed

Preparation

* Wash the chicken in water with the lime juice.

* Clean & cut chicken into small pieces.

* With the exception of the flour mix, oil and ketchup, combine the chicken and all the other seasonings-including soy sauce.

* Rub all the ingredients into the chicken and allow to marinate for a few hours (even overnight, if possible).

* Remove the tomatoes,scallion and other easily removed seasonings from the chicken and place in a bowl.

* Heat the vegetable oil- toss chicken into flour mix, and fry all the chicken pieces until brown.

* Add all the seasonings in the same saucepan along with the tomato ketchup and carrot.

* Add water

* Cover and cook over medium heat until tender.
