For his interview, does he need my original birth certificate, or is a copy sufficient? He also has copies of all pages of my current and expired passports.

Also, does anyone know offhand if the Hamburg, Germany consulate does the interviews, or will he have to travel to Berlin or Frankfurt.

And, for the affidavit of support, do I need proof of employment and the tax filing, or do I choose?

Check with the US State department website to find the consulate for your interview. Take original documents and copies. Take as much proof as you can get re affidavit of support.
