Generally speaking, how flexible is the K1 interview date?

For example, lets say that my interview was scheduled for January and I wanted to delay it for a couple months. The reason for doing this is because I don't want to enter the US with the visa until later in the year which would keep it from expiring.

Do you think the Embassy would allow me to delay the interview or is it set in stone once they notify you of the date?

You do not have to jump on a plane right away. You have up to 180 days to use the visa to enter the US. Once you enter the US your I-94 expires in 90 days.
