You could track the AOS and EAD on the USCIS site the same as you could for your K-1. All you need is the receipt number(s). (You enter them or create a portfolio in the same place.)

Yes - or, if you paid by personal check, you might be able to read the receipt numbers off the back of the check but often they aren't the most readable...
