Does anyone have a good recipe for chocolate cake/icing? That's sort of easy? I want to make my hubby a birthday cake next week, but I'm not much of a baker and have never made a cake before (unless you count Betty Crocker out of a box!)

LOL I was going to suggest betty crocker.

I made a chocolate souffle cake for mothers day. No icing but berries and icing sugar on top.

If you want the recipe I will have to transcribe it for you tonight. Let me know.

My favorite chocolate cake recipe. Instead of ganache, I'd recommend using an Italian buttercream if you can make it. Possibly maple flavored buttercream, mmm! It'd go well with the season and if you modified the recipe to add a little bit of nutmeg, cinnamon and ginger, it'd be perfect for fall.

this icing is super easy to make and super yummy...

Instant Pudding Recipe

1 envelope Dream Whip

1 1/2 cup milk

1 package (4 serving size) instant pudding mix

1/2 teaspoon vanilla

Combine all 4 ingredients in a small mixing bowl. Mix to moisten. Beat about 5 minutes until mixture will stand in peaks.

Variation: The lemon instant pudding mix is outstanding. Also the butter pecan. The vanilla is very versatile. Just try them all to decide your favourite.

I made these the other week and they were really yummy.. I know they are cupcakes but I am sure you could pour the batter into a cake pan...

Cola Chocolate Cupcakes Recipe

24 cupcakes

* 1 3/4 cups all-purpose flour

* 2 cups white sugar or brown sugar, packed firmly

* 3/4 cup cocoa, measured,then sifted

* 2 teaspoons baking soda

* 1 teaspoon baking powder

* 1/8 teaspoon salt

* 1 teaspoon vanilla

* 2 eggs

* 1/2 cup oil

* 1 cup strong coffee or cola

* 1 cup buttermilk or yogurt *

1. Preheat oven to 350 degrees F.

2. Line two twelve cup muffin tins with cupcake lines.

3. In a large bowl, using a wire whisk, stir together flour, white or brown sugar, cocoa, soda, powder, and salt.

4. Stir in all wet ingredients- vanilla, eggs, oil, and coffee or cola, and buttermilk, to dry mixture, using a large wire whisk, or beat on electric mixer on medium speed for two minutes.

5. Pour into prepared pan.

6. Batter will be thin.

7. Bake for 20-24 minutes or until cupcakes test done.

8. (Cupcakes should be slightly puffed up in centre and spring back when touched).

9. Freeze frosted or unfrosted.

10. Makes 18 to 24 (medium).

11. Recipe can be doubled or tripled.

*I don't always have buttermilk so what I usually do is add about a teaspoon lemon juice on the bottom of the cup and fill up with regular milk... and then let it sit for about 5 minutes or so..

yea you could..lol that cupcake recipe is really good.. they are so nice and light...

one year my mom didn't make me a cake or anything for my Birthday but they stuck a candle in a store bought apple fritter for me :lol:

When we were kids my Mom would always make us angelfood cake for our birthdays. She would wrap nickels in glad wrap and hide them in the cake - of course we all thought this was oh so wonderful!

Of course today there would have to be a warning sticker on the cake :lol:

if I remember correctly I think it was a recipe book...

oh and just to be clear , my mom usually made us Birthday cakes.. just that year she didn't :P

she usually made chocolate spice cake for our Birthdays..
