Another quick question. I was wondering if I would be allowed to travel to the USA for a quick visit during the k-3 process? Or am I not allowed to travel until the visa is issued.

It can be difficult, but the good news is since your POE is technically in Ireland if you get turned away you've not flown all the way over for nothing! You have to show "substantial proof" that you are returning to Ireland after your visit. As much as possible, as it can be difficult. A letter from your boss, enrollment for the next school term, apartment lease, things like that.

Alternatively, if it's for a short visit, you could just not say anything about being married... My husband did that once with no trouble.
