it's so funny to me how bad these cheeses smell but they taste so damn good LOL

i think i'll use the cream cheese i have that'll go bad the next few days. i dont want to buy any cheese i wont be eating just to make a sauce, u know? i eat provolone, i have no idea how pecorino tastes like.

i also bought baby brie a few days ago and i didn't like it. dunno what to do with it

is pecorino similar to parmesan?

put some jam on top of the brie, wrap in puff pastry, and bake at like 350 until the puff pastry is done

also chicken with brie and bacon is quite good

Feta (yeah, that's how I roll, gives it a lot of moisture)

no butter. i'me between using milk, salt, nutmeg, white pepper, and 4 cheese, maybe add some cornstarch for thickness, or i'll use creme de leite, but then i'll have too much sauce, maybe i can freeze later.

I'm not big on the 4 cheese sauce, I usually make the cream sauce Amby mentioned but I use a parmesean / romano mix. I like to make it with tortellini and peas

you can use an egg yolk to thicken it
