My husband's AP was approved last week (still in AOS and EAD: card production ordered) and we are trying to plan a trip back to Nicaragua. I have read the notice from USCIS again and again, but I want to be sure before I buy the tickets....

are there any special precautions we need to take? or extra steps that are necessary?

If you haven't had any overstays previously - you should have no trouble re-entering the US.

You should have received two identical AP documents - bring them both with you. When you return - CBP will retain one, stamp and return the other to you.

No. When you return, present you passport and BOTH copies of the AP. They will stamp them, keep one and give you back the other. It is a multiple entry document and may be used for as many entries as you have until the expiration date. For subsequent entries you present the stamped copy of the AP you keep.
