I got my husband to make balsamic chicken- I love it! He just takes chicken breasts, pours a mix of balsamic vinegar, water, olive oil and a package of Italian seasoning spice over it and bakes it. I boiled up some angel hair pasta- the chicken and balsamic sauce is awesome on it. Steamed some veggies and made a salad.

That sounds yummy MissStacey. I'm a huge balsamic vinegar fan as well. What do you mean by "a package of Italian seasoning spice"?

I changed my mind a bit on what we had for supper last night. I bought these small steaks for pan frying, so we had that and I made a mushroom/onion cream gravy for them that you make right in the pan after fast frying the steaks. It was very VERY good. I also made some brussel sprouts. I slice them top to bottom, boil them for 2 minutes, then fry them in butter/olive oil mixture for about 15 minutes until they're carmelized. Throw in the garlic for the last minute and they're crispy on the outside and yummy. We had sweet potato fries with that as well.

Tonight we're going to the Cardinals game, so we're going to a favourite pub for supper beforehand. The pub offers front door service via a trolley to the game and back for free, so it's a great deal and a good meal!

We ended up having boston market for dinner last night, I had the chicken strips which were ok.

Tonight, I think I will make shephard's pie.

The Canada Flag Cake

(Prep Time: 15 min., Ready In: 2 h 15 min., Serves: 12 )

LINE bottom of 13 x 9 inch baking pan with 1 pkg. (298g) sliced pound cake.

DISSOLVE 2 pkg. (85 g each) Jell-O Strawberry Jelly Powder in 2 cups boiling water; add 3 cups ice cubes and stir until slightly thickened about 3 to 5 minutes. Remove any unmelted ice cubes. Stir in 2 cups crushed or sliced strawberries. Spread over cake slices. Chill 10 minutes.

SPREAD 2 cups of thawed Cool Whip Whipped Topping on top of jelly mixture. Chill for 2 hours. Garnish with additional strawberries arranged to resemble the Canadian Flag.

Tip: You can also quick-set the jelly with frozen fruit. Just dissolve jelly powder in 2 cups of boiling water then stir in 2 cups frozen fruit and 1 cup ice cubes. chiff.com

We have this: It comes with the bottle and the seasoning packets. The bottle tells you where to fill oil to and where to fill vinegar, I don't really follow that though, I like more vinegar than oil. My sister loved the dressing I made and bought a few of those to take back to Canada. You can find the packets (or this kit) in the salad dressing aisle.

I always have a bottle ready so my hubby just takes the bottle, adds some more vinegar and water (so the chicken isn't too oily) and throws it over some chicken breasts in a roasting pan. His technique is- he broils each side for a few minutes and then turns the heat down and lets them bake for about 15- 20 minutes.

the hubby says he likes that sauce better then the jarred stuff.. he says it isn't as strong... I always blend the tomatoes though because he doesn't like chunks of tomatoes :P but I do saute the fresh tomatoes in a little olive oil first before blending..

Yeah, the jarred stuff I cannot take a liking to. I've always made my own. A nice way to do the tomatoes, Marilyn, is to roast them in the oven with a bit of salt and pepper and some olive oil. It really brings out the sugars and intensifies the flavour.

The ISP for our apartment complex invited a few of us out to a BBQ place to get some feedback. BBQ tastes even better when it's free. Also, there was swag. I love swag. When I'd be sent to represent my company at conferences, I'd take of my name tag and go around pinching everyone else's swag. Competitive intelligence gathering...yeah..that's what I was doing.

This is such a Kraft recipe. :lol: Does anyone else remember those Kraft recipe commercials during the Ed Sullivan show? OMG. I'd be sitting there.... even at that age..... with my mouth dropped open in horror :o and then I'd be, like.... icon8.gif. No offense to anyone who eats like that. :lol:

Last night we had the homemade chicken soup with biscuits and a pear and goat cheese salad. Tonight we are having Swiss Chalet chicken and fries with tinned peas. :luv:

You can make a red cake and just use strawberries, no jello and real cream. Now get back in the kitchen or i'm calling your Husband to tell him you are a slacker eh. :hehe:

I wasn't that mean to them, even though at one point their customer service was so bad we almost moved to get away from them. They were so sure that price was everyone's number one priority. When every single person at the table said that they would pay more for a provider with great customer service, I saw jaws drop.

I even brought them a competitive offer that I had been sent two weeks ago, that they had no knowledge of.

Free food, free stuff and leftovers for lunch.....yay!

So, we drove to CT for the job interview yesterday. Got there and they had apparently left me a message that they were cancelling all interviews because they may have lost funding for the position. However, I left very early in the morning to drive down and missed the call on home phone and my cell didn't show any missed calls. They did interview me, since I showed up and didn't know anything about it being cancelled! I would be very interested in this job if the funds become available .... so who knows.

On the eating side of things:

lunch at Friendly's - had a turkey, bacon, cheese melt and fries. It was yummy and so unhealthy.

Dinner was at Olive Garden. It was actually pretty good. I had pasta pomodoro and hubby and I shared steamed mussels to start. Hubby had lasagna, which he was happy about, because his mean wife never makes it :devil:

Not sure what dinner is tonight. I forgot to thaw meat and I don't think I have anything for a veggie meal either.

Tonight is ratatouille using fresh eggplant, zucchinni, basil and oregano from the garden. I've added onions, several different types of peppers, yellow squash, tomatoes and garlic and am just waiting for the pasta to cook. I love fresh garden produce - still have more of this zucchini and another eggplant to use - and more is coming in tomorrow. Yep - time soon to make friends with the neighbours again! Hehehe

oh - and mushrooms too!
