the plan for today is to try out a cornbread stuffing recipe that hubby wants to make for Thanksgiving.. he is also planning on doing a beer can chicken on the grill.. along with some green onions and corn on the cob..

I also want to make some guacamole...

Made this recipe into meatloaf - Thanksgiving Turkey burgers. I read one of the review comments where the woman said she'd made it into meatloaf instead so I figured I'd give it a try.

Very yummy, kids would like this for sure

Here's what I adjusted (in bold):

Ingredients

1/4 cup butter

1 onion, finely chopped

1/2 cup finely chopped celery

2 pounds ground turkey breast

1 (6 ounce) package chicken-flavored dry bread stuffing mix

2 eggs

Enough milk to mix the mealoaf and make it a little sloppy

1 tsp ground sage

1 tsp poultry seasoning

1/2 tsp ground pepper

Makes 2 meatloaves.....350 degrees for 1 hr

I served it with cranberry sauce and a side salad. Frozen Coconut Cream pie for dessert (the highschool had a yummy fundraiser recently selling pies!)

Marilyn - I love my crockpot and use it regularly! Good for you!

Well, we went to Costco for lunch today - you know, tasting all the samples at the end of each aisle? Today was great - crab rangoon, Jamaican patties, mini quiches, mac and cheese, New England clam chowder, Madras lentils, 5 veggie pasta, spinach ravioli, brie on crackers, havarti on crackers, spinach dip on crackers (we bought some spinach dip), turkey sausage and scrambled eggs, breaded tilapia, yogurt and cranberries, chocolate toffee bars, organic milk, pear slices and Creme Brulee candy! After that I was full but Joe had a pizza slice at their restaurant. (They did offer Folger's coffee too, but it was pretty bad so both of us threw ours out after the first sip.)

So, tonight for dinner we just had boiled eggs, spinach dip on fresh baked rustic bread and 3 bean salad. I love having lunch at Costco! :lol:

I was going to make ravioli and nuke the last of my leftover spaghetti sauce...but someone just came by and bought my microwave from me. So there goes THAT idea. :lol:

lol...just to be clear I did have a crock pot that I used regularly but the ceramic insert was chipped and it never worked right.. I would set it on low for 8 hours and the stuff would be done in about 4...

the new one has a digital timer that you can set to whatever time you want in 30 minute intervals...

we are trying it out today with the corn bread stuffing...

I had a digital timer one, loved that thing. I had cleaned the insert and put it on one of the back burners to dry. Hubby turned that burner on low on accident and the insert cracked straight in half. :(

Tonight, one of the local restaurants had a Middle Eastern themed night. The chef is from the Middle East and apparently, twice a year, they have this evening. Personally, I wish the food would be on the regular menu, but no luck. We had a sampler of items .... hummus, baba ghanouj, tabbouli, kibbeh, stuffed grape leaves, and a whole bunch of other things I didn't recognize but enjoyed!

I made hamburger helper, Stroganoff flavour.

It's not too bad actually.

Sushi for lunch tomorrow and Beef n Potato soup for dinner.
