Joe worked from home today so we are going to go out for dinner to our favourite Mexican restaurant.

“...Isn't it splendid to think of all the things there are to find out about? It just makes me feel glad to be alive--it's such an interesting world. It wouldn't be half so interesting if we knew all about everything, would it? There'd be no scope for imagination then, would there?”

Ok - we ended up going to a new Mexican Restaurant that had sent a card and flyer in the mail to us - the card had a free dessert on it :) . I had mesquite chicken quesadillas and Joe had 2 poblanos - the food was good, so we'll be back. We split a flan for dessert - think creme brulee- and it was excellent. The decor was nice - like a hacienda with murals on the wall showing what you might see if you looked out the windows. The service was excellent - and they had a birthday party going on next to us. Halfway through our meal the staff all came out, plunked a big red, gawdy sombrero on the head of this guy and sang the Mexican version of "Happy Birthday". Now I know where to take someone to embarrass them on their birthday! They were getting set up for some sort of a band entertainment when we left and people were lining up so it seems like a pretty busy place.

We went to this place last night:

http://www.blackbirdnj.com/

It was really good! Great service and all of the food is organic and it's a green restaurant. I highly recommend it to anyone who is in the area. It made me think of Jill a lot because there was really good vegetarian options... so Jill I'm going to have to take you here one day! :D

I made some chicken breasts in the oven with a maple pecan crunch coating. You dip the chicken breasts in a mayo, maple syrup mixture, then coat with pecan pieces mixed with panko crumbs. Very moist and delicious. In the oven for about 40 min. at 350 degrees. So, we have some of that left over for tonight. I'm thinking perhaps an acorn squash with that, and some wild/brown rice.

Well my husband has come down with the flu so I am making a spaghetti squash with ginger, garlic and honey. Help us boost our immune systems and help him feel better too.

Dinner tonight is going to be Italian sausage taken out of the casing, cooked in garlic, red peppers, onions, and a bit of tomato paste served on rice.

Dessert is apple crisp.

Pizza, Wegmans frozen pizza is the BEST!! It tastes better than take out pizza, the ones around here anyway. The crust rises in the oven and it's so darn YUMMY (Sorry Krikit  )
