That concoction sound yummy Marilyn. I'd make that as well, but leave out the sugar. That's cute about your husband not liking chunky tomatoes. :lol: We had chicken noodle soup and a salad last night. Gene might be going out for supper before the game tonight, I don't know. I have some leftover chili in the fridge we could have, or soup again...but I'm running out of leftovers. :lol: Other than the chicken (rotisserie) that I buy at Costco, I've never bought other meat there. The other day when I was there, I bought two beef roasts, two pork roasts and some pork chops. I'm anxious to try a roast this weekend!

Costco has really good meat quality.

so I am hoping the hubby is home early today so that maybe we can eat dinner together..

today isn't his usual work day though.. I guess they are doing something with the computer systems over the weekend so they had to work today but they get Sunday off ... he said he might be home by 10 pm

the hubster got home earlier then expected last night, before 8pm :dance: so he swung by and picked me up and we went out for dinner.. we went to Farmer Boys and had burgers and deep fried zucchini.. they make the best deep fried zucchini.. YUM!

the hubster wanted soup so I made this.. first time trying it.. smells good but I haven't tasted it yet...

Cream Of Potato Soup Recipe

30 min | 10 min prep

SERVES 6

* 2 tablespoons butter or margarine

* 1/2 cup chopped onion

* 3 cups potatoes, peeled and diced

* 1 cup chicken broth, lowfat okay

* 1/4 cup chopped fresh parsley

* 1/4 teaspoon dried thyme

* 1/4 teaspoon celery seed

* 1/4 teaspoon salt

* 1/4 teaspoon black pepper

* 1 1/2 cups milk, lowfat okay

* 2 tablespoons flour

1. In large saucepan, cook onions in butter until soft.

2. Add potatoes, chicken broth, parsley, thyme, celery seed, salt, and pepper to saucepan.

3. Simmer for 15 minutes.

4. Add milk to saucepan.

5. Puree half of soup and flour in blender.

6. Return to saucepan.

7. Heat through.

I didn't have enough potato so I added some frozen carrots... I also didn't have celery seed or parsley.. i did add some dried cilantro though..

so hubby is grilling some chicken later.. he made this rub for the chicken and it is sitting in it in the fridge... we just used half a recipe for 4 chicken thighs and we will only marinate it for an hour or two..

Dry Rub for Chicken or Turkey Recipe

6 hours | 6 hours prep

3/4 cup (approx)

* 1/4 cup brown sugar, packed

* 2 tablespoons chili powder

* 2 tablespoons paprika

* 1 tablespoon cumin

* 1/2 teaspoon cayenne pepper (can use more)

* 1 tablespoon garlic powder

* 3 teaspoons mustard powder

* 2 teaspoons salt

* 2 teaspoons black pepper

1. Mix all spice ingredients together.

2. Rub onto chicken (use as much of the rub as desired, use lots or use a little.

3. Cover the chicken then place in the refrigerator for 6-24 hours.

4. Grill as desired.

Last night I made a pork roast I got from Costco. The meat was amazing. Very tasty, very tender. I made oven roast potatoes with it, and butternut squash. Mmmmm. Tonight is leftovers.
