I am just going to make a simple tomato sauce using a mixture of canned tomatoes and some fresh tomatoes.. going to fry up some onion and green bell pepper to add to it too... and serve it over some elbow macaroni.. hubby's new favourite pasta :P and some garlic bread...

Our Asian salad last night was wonderful. It has a peanut butter rice vinegar dressing, and I added grilled chicken to it.

Tonight we're going to have bbq beef on a bun, with a green salad and sweet potato fries.

I made pulled pork with the pork tenderloin and it was really good. Just put together a sauce of diced tomatoes, dark brown sugar, mustard and garlic - cooked it in that and reserved some for sauce to pour over later (adding diced onions and green peppers) - had that over rice.

Not sure what to make tonight.

When I was young my friend and I used to make a pasta salad out of those ingredients.... along with a bit of garlic and some salt and pepper. No bell pepper, though..... just the onion. Anyway, you could serve it hot or cold. It was yummy both ways. Mmmmm. Now I have a craving for it. :lol:

Not quite sure what we'll be having this evening. I've got a chicken soup in the works using the carcass from Sunday's roast, but I'm thinking we'll have that tomorrow with fresh biscuits. But I've also got all this leftover chicken so we may have that with french fries, peas, and swiss chalet sauce.

the hubby says he likes that sauce better then the jarred stuff.. he says it isn't as strong... I always blend the tomatoes though because he doesn't like chunks of tomatoes :P but I do saute the fresh tomatoes in a little olive oil first before blending..

The ISP for our apartment complex invited a few of us out to a BBQ place to get some feedback. BBQ tastes even better when it's free. Also, there was swag. I love swag. When I'd be sent to represent my company at conferences, I'd take of my name tag and go around pinching everyone else's swag. Competitive intelligence gathering...yeah..that's what I was doing.

I got my husband to make balsamic chicken- I love it! He just takes chicken breasts, pours a mix of balsamic vinegar, water, olive oil and a package of Italian seasoning spice over it and bakes it. I boiled up some angel hair pasta- the chicken and balsamic sauce is awesome on it. Steamed some veggies and made a salad.
