It was a lot of fun!! We will most definitely be doing it again sometime. Our little crew just keeps on getting bigger and it's just really nice to hang out with people who understand what you're going through. You can try to explain it to someone who lives here, but they don't really understand.

EXACTLY!! No matter how many American friends I make here, it's not the same as being friends with Canadians and able to talk about stuff that only WE understand!!

Yeah. I've been thinking about that quite a lot lately. I've met some really wonderful people here, but I always have that weird feeling that they just don't "get" me. There seems to be some sort of disconnect, and it makes me uneasy. :unsure:

Anyway.... back to food. lol. Last night I made teriyaki chicken with veg and noodles. Tonight I am making nothing that involves turning the oven or the stove on because our a/c isn't working. icon2.gif Maybe we'll go out for dinner.

:lol: Yeah the pre-planned menu seems like a good idea, I just don't think I'd follow it as I rely mostly on my cravings when I'm deciding what's for dinner. If tonight is pasta night on the menu and I don't feel like it, I'll mess up the menu :lol:

I can only eat so many caaserole recipes which call for a Can of Cream of Something :P Last night we had a stirfry , this recipe from this month's Chatelaine - blandest thing ever - it had a little heat based on the amount of chili flakes you add - nothing to write home about otherwise

Sticky chili chicken

Published by Chatelaine on 11/1/2009 This spicy stir-fry has tons of flavour and takes less than 20 minutes to hit the table. For an extra-fiery kick, add more chili flakes or use hot chili-garlic sauce instead of the flakes.

Preparation time 10 minutes

Cooking time 6 minutes

Makes 3 to 4 Servings

1 cup (250 mL) chicken broth or bouillon

1/2 cup (125 mL) apple juice

4 garlic cloves, minced

3 tbsp (45 mL) soy sauce

2 tbsp (30 mL) cornstarch

1/2 tsp (2 mL) hot-chili flakes

1/2 head of Savoy or napa cabbage

1 red pepper

3 green onions

3 skinless, boneless chicken breasts

Pour broth and juice into a bowl. Add garlic, soy, cornstarch and chili flakes. Stir until cornstarch dissolves. Slice cabbage into bite-sized pieces. It should measure about 4 cups (1 L). Cut pepper into thin strips. Thinly slice onions. Cut chicken into bite-sized pieces.

Oil a wok or large frying pan and set over medium-high. Add chicken. Stir-fry until lightly golden, 3 to 5 min. Stir broth mixture, then pour into pan. Using a wooden spoon, scrape up and stir in any brown bits from pan. Add cabbage and pepper. Stir-fry until chicken is cooked through and cabbage is as soft as you like, 3 to 5 min. Taste and stir in more soy sauce, if needed. Just before serving, stir in onions. Excellent over steamed rice or cooked vermicelli noodles.

I made this today.. instead of zucchini I used red bell pepper

Fiesta Fry Pan Dinner

Ingredients:

1 pound ground turkey or beef

1/2 cup chopped onion

1 (1.25 ounce) package taco seasoning

1 1/2 cups water

1 1/2 cups sliced zucchini

1 (14.5 ounce) can stewed tomatoes, undrained (I usually use a jar of salsa or a can of diced tomatoes)

1 cup frozen corn

1 1/2 cups uncooked instant rice *

1 cup shredded Cheddar cheese

Directions:

1. In a skillet, cook turkey and onion until meat is no longer pink; drain if necessary. Stir in taco seasoning, water, zucchini, tomatoes and corn; bring to a boil. Add rice. Reduce heat; cover and simmer for 5 minutes or until rice is tender and liquid is absorbed. Sprinkle with cheese; cover and let stand until the cheese is melted.

*I just used about 1/2 cup or so regular rice and just added about a 1/4 more water and let it cook about 20 minutes..

I still don't have my pan back, so no casserole for me.

I think I'm going to have fish w/ veggies and rice for supper.

Mmmmm. Montreal smoked meat samwiches. :luv: I think I'm having chicken pot pie with steamed green beans.

They were good, so good in fact I had another one for lunch yesterday :lol:

We had left over stew for dinner last night. Tonight pork chops, simply because I took them out of the freezer and haven't gotten around to cooking them yet.

Not sure what we will have with that.
