I am just going to have a salad and maybe something else... I buy this super yummy and fresh bagged salad from the market.. it has sugar snap peas, radishes etc in it.. I have tomatoes and cucumber to add to it too and instead of croutons I use tortilla strips.. and I bought this new dressing today Lite avocado ranch with lime...

I'm making this tonight, but subbing the ground beef with soy crumbles. I also add more veggies, like peppers and onions and corn

Beef Taco Bake

From: Campbell's Kitchen

Prep: 10 minutes

Bake: 30 minutes

Serves: 4

Ingredients:

1 pound ground beef

1 can (10 3/4 ounces) Campbell's® Condensed Tomato Soup

1 cup Pace® Chunky Salsa OR Pace® Picante Sauce

1/2 cup milk

6 flour tortillas (8-inch) OR 8 corn tortillas (6-inch), cut into 1-inch pieces

1 cup shredded Cheddar cheese (about 4 ounces)

Directions:

Cook the beef in a 10-inch skillet over medium-high heat until well browned, stirring often. Pour off any fat.

Stir the soup, salsa, milk, tortillas and half the cheese in the skillet. Spoon the beef mixture into a 2-quart shallow baking dish. Cover the baking dish.

Bake at 400°F. for 30 minutes or until the beef mixture is hot and bubbling. Sprinkle with the remaining cheese.

We did have a piece of pie with vanilla ice cream late afternoon-ish and as I presented it I said Dinner! However around 8:30 we were both hungry so had some perogies and fish.

I put two large dessert spoons of plain yoghurt in it, it gave it a nice creamy texture/flavour.

For the butternut soup we bought plain yoghurt, they only had the like 680g container of it, so many things are getting yoghurt added to them this week!

They had big green peppers on sale today - a huge bag for $1.99 - so I am going to make stuffed peppers. I'm stuffing them with a mixture of ground turkey sauteed with onions and then adding in a package of Rice A Roni Whole grain blend (brown rice, pearled barley and pearled wheat) with fresh parsley, sage, oregano, thyme and whatever else I can come up with, then topping them with Parmesan cheese and baking them covered with tomato sauce. We also have some fresh asparagus so we'll have that too.

Cooked a pork roast in the crockpot ... added a can of cream of mushroom soup, a package of onion soup mix, celery, onions mushrooms and carrots. Came out very yummy and the gravy was golden, not creamy like I had thought it would be with this recipe (which I preferred). Served it over egg noodles.

We ended up having grilled cheese last night. I need to look in the freezer and see what is available today :hehe:

I did make up a menu for a week and did buy all the ingredients for everything, but you know, I am not a menu for a week person! It's just not me. However I don't think it's a bad idea, at least I have ingredients on hand for a variety of things.
