So, I got home much later than planned and got the chicken in the oven later than I wanted. So I ended up having a Lean Pocket and a spinach and tomato salad. I am eating a bit of chicken now as I type this. Pretty good, but next time, will make some modifications. Originally, it was meant to grill the chicken, but other people on Allrecipes posted that they baked it in the oven. I thought there was a bit too much olive oil and not enough lemon juice, so next time I will adjust accordingly. Other than that, was fairly yummy. And I threw into the baking dish some onions and quartered redskin potatoes and THOSE are fabulous and crispy.

Which version did you try? I might have to try that one too.

Well, we ended up having leftovers last night, so I still have this beef and barley soup in the fridge. lol. Since I have a lot of running around to do today, we will definitely be having it this evening. icon2.gif

Dinner is whatever hubby wants, it's his birthday so I'll make whatever his heart desires, on this night only :lol:

So I ended up baking a Betty Crocker cake this morning, it's half-homemade since I had to add eggs, water and oil :lol: I also picked up some Wilton Buttercream Icing mix, you just add butter and milk. My stepmom told me it's the absolute best icing and she used that to ice my sister's wedding cake, so I'll ice it this afternoon. Then I bought M&M's (Grrrr I wanted Smarties!!) to spell out happy birthday! Oh and to top it off, picked up some choc and van ice cream :D

I tried the one Carla posted, because it didn't have the apples in it - I couldn't see putting apples in my soup! I didn't have any honey so I used 2 tbsp of brown sugar.

Mike loveeeeeeeed the soup.

It made quite a big batch and it is quite filling, so ended up freezing some of it for later, which is handy.

Curried Butternut Squash Soup - Ellie Krieger

Ingredients

1 tablespoon canola oil

1 medium onion, chopped (about 2 cups)

2 cloves garlic, minced

1 (2 1/2-pound) butternut squash, peeled, seeded and cut into 1-inch cubes

6 cups low-sodium chicken broth or vegetable broth

1 tablespoon plus 2 teaspoons curry powder

1/2 teaspoon salt, plus more, to taste

2 tablespoons honey

4 teaspoons plain low-fat yogurt, for garnish

Directions

Heat oil over medium heat in a 6-quart stockpot. Add onions and garlic and saute until soft but not brown, about 6 to 7 minutes. Add the butternut squash, broth, curry powder and salt and bring to a boil. Reduce heat and simmer until squash is tender, about 12 to 15 minutes. Remove from heat stir in honey and puree with an immersion blender or in batches in a blender until smooth. Season with salt, to taste.

Ladle into serving bowls and add a dollop of yogurt.

Dinner tonight is no dinner for me. I have fillings at 6PM and I don't think I'll be in the mood to eat after.

I found this recipe today.. I really want to try it... I would serve the chicken on the side though ...

Pasta with Chicken in a Citrus Cilantro Sauce

1 lb. Pasta

3 tablespoons olive oil*

2 cloves garlic*, minced

½ cup frozen orange juice concentrate*

1 cup water*

½ cup lemon juice*

2 tablespoons Dijon mustard*

2 teaspoons tomato paste*

1 tablespoon soy sauce*

1 tablespoon fresh ginger root*, finely minced

1 lb. boneless, skinless chicken breast

1 bunch fresh cilantro*, chopped

1. Combine orange juice concentrate, water, lemon juice, olive oil, mustard, tomato paste, garlic, soy sauce and ginger in bowl. Mix thoroughly.

2. Put chicken in plastic zipper lock freezer bag. Add half of the orange juice mixture, refrigerate and marinate for 30–60 minutes.

3. Grill or broil chicken on both sides until cooked through, but moist. Slice into bite-sized pieces and reserve.

4. Heat remaining orange juice mixture in small saucepan and simmer for 5 minutes.

5. Meanwhile, cook pasta in 6-8 quarts of rapidly boiling salted water until al dente (about 8-10 minutes). Drain and transfer to heated pasta bowl.

6. Add cilantro to pasta and toss thoroughly. Add the heated sauce and toss again. Add the chicken and toss one final time. Serve immediately.

Serves 6

True Lemon Chicken Recipe

* 2 boneless skinless chicken breasts, cut into bite-size pieces

* 1 tablespoon olive oil

* salt and pepper

SAUCE

* 1 lemon, juice of or 3 tablespoons bottled lemon juice

* 1 cup water

* 1/8 cup lime juice

* 1/8 cup lemon juice

* 3/4 cup sugar

* 1 pinch salt

* 2 drops yellow food coloring

* cornstarch, mixed with water, to thicken

1. CHICKEN: Saute cubed chicken in olive oil until done.

2. Set aside.

3. SAUCE: In a small sauce pan, combine first 7 ingredients and bring to a low boil.

4. Slowly stir in cornstarch solution.

5. Depending on how thick you want the sauce determines how much cornstarch solution you use.

6. Careful- sauce tends to boil up when cornstarch solution is added.

7. Serve chicken over a bed of rice.

8. Pour sauce over chicken & rice.

9. Enjoy!

Interesting that it calls for honey (or brown sugar.. lol). I would think that the squash was sweet enough on its own. But that might just be me. Not a big lover of sugar in my food. lol

Hmm. Tonight we are having..... ? Maybe I'll make the butternut squash ravioli.

Darn, I didn't take a picture! So should have though, it turned out pretty well for my first cake! The only little thing was when I was icing the cake, some crumbs came up into the icing.... but it tasted good, so that's the most important part! I'm definitely not a baker though :wacko:
